Whiskey: What's With The Bite?

Whiskey fans all over the world measure the taste of their whiskies by how flavorful and “smooth” they are. Flavors come from a variety of additives to the grain chosen to start the fermentation process. So what about the “smooth” taste?  Whiskey-lovers savor that slow-burning sensation warming the back of their throat while the “bite” that leaves you shaking your head, wincing and exclaiming “whew!” That’s the one that will leave you light-headed and foggy the next morning!

That “bite” of whiskey is the higher ethanol content in the whiskey itself: the chosen percentage of alcohol or proof the distiller chooses to keep in the final product. In the US, alcohol content is measured by volume aka alcohol-by-volume (ABV). Alcohol proof in the States is defined as twice the percentage of alcohol by volume. For example, 100-proof whiskey contains 50% alcohol and 86-proof whiskey contains 43% alcohol. That “bite” can be adjusted by the distiller through ethanol-content and through adding natural flavors such as fruit and spices to “tame” the “bite.”

Whiskey’s heritage is entrenched in the high-proof glass mason jar swill secretly distilled in the deep woods. The phrase “it’ll put hairs on your chest” undoubtedly referred to the “bite” of the “family-recipe”. Early distillers had to experiment in making their moonshine, and sometimes the whiskey was too weak or very strong. Over the generations, families have adjusted their recipes, their distillation processes and storage containers to provide a smoother balance to their ‘shine.
